To produce superior Icewine, summers must be hot and winters cold and intense to provide healthy, fully ripe grapes. During the growing season, Niagara Peninsula boasts a climate similar to other famous wine growing regions.
Grapes are picked when the temperature reaches -10 Celcius. Once the Icewine is fermented and bottled the balance of acidity and sweetness is unparalleled and magical.
