The red berry characteristics of the vinifera grape Cabernet Franc translate as an Icewine into strawberry like aromas and flavours. This Icewine is completely different from the white Icewines. The colour comes from pressing only as there is no skin contact during fermentation. The earlier it is harvested, the darker the colour and the deeper the flavours.
To produce superior Icewine, summers must be hot and winters cold and intense to provide healthy, fully ripe grapes. During the growing season, Niagara Peninsula boasts a climate similar to other famous wine growing regions.
Grapes are picked when the temperature reaches -10 Celcius. Once the Icewine is fermented and bottled the balance of acidity and sweetness is unparalleled and magical. Of all the wine-producing regions in the world, only Ontario has a winter climate cold enough to ensure an annual crop of world-class Icewines.
