The fruit was harvested during the evening at
low temperature. This helps to preserve
primary fruit flavours.
This wine was fermented in high tech, stainless
steel tanks at 11˚C. Low temperature
fermentation is essential to retain as much
primary fruit lift and colour as possible; a
necessary strategy for this sweet red.
Our Wild Bouquet Sweetheart is a blend of
Moscato with Cabernet Sauvignon. We halt
the fermentation process of the Moscato half
way to ensure original fruit sugars are
retained and blend into the Cabernet.
We use a distinctive yeast strain for this wine:
QA23. This is a Portugese strain that is
especially suited to the fermentation of fresh,
fruity wines.
